| Brandied Bananas Flambe |

We’re always looking for something fast, easy and impressive - and we were impressed with this smart dessert served to us by Helen’s nephew Jeff, who later on landed in chef’s school. Better to make more of this one, because it goes down real easy.
- 1/3 cup butter (the real thing)
- ½ cup brown sugar
- 3 bananas, cut in large, bite-sized pieces (riper is better)
- 2 tbsp. brandy
- vanilla ice cream
- Melt the butter in a large saucepan. Add brown sugar and bananas, stirring to coat bananas. Heat just to warm them through.
- Heat brandy in a microwave for 30 seconds, on high. Pour warm brandy over bananas and light with a match. If it doesn’t light immediately, add more heated brandy. (If using a gas range, simply tip the pan to allow flame to come up the side and it will light the brandy.)
- Serve immediately over ice cream.
