Simply Sensational Blueberry Cake

Mix this up in one bowl. It couldn’t be easier and it tastes great!
  • 2 cups flour
  • 3/4 cup sugar
  • 2 tsp. baking powder 
  • 1/2 tsp. salt
  • 2 eggs
  • 1/2 cup milk
  • 1/3 cup butter or margarine, melted
  • 1 tsp. lemon rind, grated
  • 1 tbsp. lemon juice
  • 2 cups blueberries, fresh or frozen
  • 2 tbsp. sugar
  • 1/4 cup sliced almonds
  1. In a large bowl, combine flour, sugar, baking powder, salt, eggs, milk, melted butter, lemon rind and lemon juice. Beat with an electric mixer on low speed until all ingredients are moistened, then beat at medium speed for 2 minutes. 
  2. Stir in 1 cup of blueberries.
  3. Spread the batter evenly in a greased 9" square baking pan.
  4. Sprinkle the remaining blueberries on top, then sprinkle with 2 tbsp. of sugar and the almonds
  5. Bake at 350 degrees F. for 55 to 65 minutes, or until a cake tester inserted in the center comes out clean.
  6. Cool the cake on a rack and serve warm or cool. 

Serves 9 

Note: If you use fresh berries, be sure to check cake for doneness at the shorter time. Frozen berries will take a little longer. This coffee cake freezes very well.
