Wild Rice Salad |

Some things are so incredibly good, you can hardly wait to taste them again. This may be high on your request list. Great for pot luck dinners!
- 4 cups cooked wild rice
- 1 cup celery, sliced
- 3 green onions, sliced
- 1 red pepper, diced
- 4 cups broccoli florets, blanched (or not)
- ¼ cup olive oil
- 3 tbsp. Soya sauce
- 2 tbsp white vinegar
- 1 tbsp. curry powder
- 2 cups crunchy chow mein noodles
- In a salad bowl, combine wild rice, celery, onions pepper and broccoli.
- To make the dressing, combine oil, soya sauce, vinegar and curry powder. Pour over salad and toss.
- Just before serving, add chow mein noodles and toss again.
Serves 6 to 8
Suggestion: Try this dish warm! Microwave it or stir-fry just enough to heat through.
