Curried Wild Rice Salad

Some things are so incredibly good, you can hardly wait to taste them again. This may be high on your request list. Great for pot luck dinners!

  • 4 cups cooked wild rice
  • 1 cup celery, sliced
  • 3 green onions, sliced
  • 1 red pepper, diced
  • 4 cups broccoli florets, blanched (or not)
  • ¼ cup olive oil
  • 3 tbsp. Soya sauce
  • 2 tbsp white vinegar
  • 1 tbsp. curry powder
  • 2 cups crunchy chow mein noodles
  1. In a salad bowl, combine wild rice, celery, onions pepper and broccoli.
  2. To make the dressing, combine oil, soya sauce, vinegar and curry powder. Pour over salad and toss.
  3. Just before serving, add chow mein noodles and toss again.

Serves 6 to 8 

Suggestion: Try this dish warm! Microwave it or stir-fry just enough to heat through.
